The Penfolds Tawnies are made in Solera Systems (stacked blending systems) at Penfolds’ Kalimna Tawny Cellars. These wines are all aged in 300-litre hogsheads (oak barrels) that are at least twenty years old when they reach the Tawny Cellars, having been used for other Penfolds wines up until that point.

The maturation process deliberately takes place under corrugated iron. At the height of summer the temperature on the top stack can reach 55 degrees; while in winter, the temperature can fall below 8 degrees. These cyclic swings in temperature are vital to the maturation process, as evaporation, concentration and controlled oxidation are all a part of the complex nature of the aromas and flavours.

The combination of extended barrel maturation and the Penfolds tradition of excellence ensure Bluestone Rare Tawny has exceptional fruit richness, mellow aged complexity and great length of flavour.

When word reached Lynchburg about a whiskey-judging contest taking place in Brussels, Belgium, the Distillery's Herb Fanning was asked to make sure some Jack Daniel's Tennessee Whiskey was shipped for entry into the competition.

Herb, who went on to work for the Distillery for many more years and was a fixture in Lynchburg until he passed away in 1997 at age 93, simply walked out to the production line and pulled off the first three bottles he could grab. He then arranged to have them shipped overseas as the contest entries from Jack Daniel's. When the folks in the advertising department found out he had pulled whiskey for the competition off the bottling line, they were a bit upset and asked him why he hadn't looked for some special whiskey for the judging. But Mr. Herb just shrugged and exclaimed, “Why, all Jack Daniel's is special!”

Jack Daniel's 1954 Gold Medal decanter honors the Brussels, Belgium Star of Excellence and is the sixth in our series of bottles commemorating the Gold Medals won by the Distillery.

The Fix Shiraz is made by Ben Jeanneret (of Jeanneret Wines) who is not only an extremely capable winemaker, but also has claims to being the youngest winery owner in the Clare Valley. The Fix Shiraz is a wine borne from opportunity rather than design. Deep into the 2008 vintage, Ben came across a small parcel of McLaren Vale Shiraz that found itself homeless. After some quick negotiations, the fruit was transported to the Clare Valley where this wine was produced. This wine has aromas of sweet plum and blackberry with a chocolate background. The palate offers flavours of dark chocolate, subtle liquorice with and a touch of savouriness supported by some soft tannins. It is all wrapped up with a deft touch of American oak. This is a sensational value red wine which at this price is difficult to fault.

The Brightwater Vineyard vines are grown in an extremely stony area of the vineyard, where water and nutrient levels are low. This helps us to restrict the plants vigour and to crop at low levels. To further enhance the aromatics, leaves were removed to allow light penetration and air movement around the fruiting zone. Gewrztraminer is an early ripening variety with an aromatic, fragrant bouquet. It is naturally a low yielding vine which can produce wonderful concentration and flavour. After harvest the grapes were de-stemmed and left for a period of skin contact before pressing. The clear juice was inoculated with a pure yeast strain and then a cool, temperature-controlled fermentation began. The fermentation was stopped prematurely to allow 10g/L residual sweetness in the wine.
